Salvatore Cascino






The brothers and "Masters" Salvatore and Francesco Paolo Cascino (who died in 1989 and to whom a Chef Club, a Street and a State Vocational Hotel and Catering School were dedicated in Palermo) trained generations of young people directing them passionately towards the art of cookery.
Some of their pupils are established chefs today, well known in Italy and Abroad.

Salvatore Cascino was born in 1929, he worked as a Chef in private houses and was the Manager and Director of Coffee bars and Restaurants.

As a "Hotel Activity Expert specialised in Catering Services" he taught for almost 30 years at the "State Vocational Hotel and Catering School" in Palermo and since 1962 he has been in charge of the kitchen at "La Botte 1962" Restaurant in Monreale, near Palermo.
He was also the teacher of "Italian and Regional Cuisine" for the pupils of Sullivan County Community College (New York State) besides being a teacher in many Cooking Courses for ladies, amateurs and a Staff Trainer in various Centres.

He was a member of the Competition Commission for cook selection in State Establishments and a cuisine expert for qualification exams in State Hotel Schools, as well as the President of the "Provincial Association of Sicilian Cooks and Pastry Cooks" in Palermo from 1999 to 2002 and today he is the honorary President of the above mentioned association.
He took part in a large number of TV documentaries on Sicilian Cuisine for RAI 3, BBC, Boston TV Station (Massachusetts) and for Channel 4 UK.
